Yield: 4 to 6 servings
1 tablespoon extra-virgin olive oil
1 yellow onion, diced
2 medium carrots, diced
1/4 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 clove garlic, minced
1 teaspoon fresh ginger, grated
1 large sweet potato, cubed
6 cups vegetable broth
1 14.5-ounce can diced tomatoes
2/3 cup Justin's®Honey Peanut Butter
Salt and pepper (to taste)
- Heat the oil in a large pot over medium heat. Add the onions and carrots and cook until soft, about 5 minutes.
- Stir in cayenne and black peppers, garlic and ginger.
- Mix in the sweet potato, broth and tomatoes; bring to a boil. Reduce heat and simmer on low for 20 minutes.
- Pour soup into a blender and blend until smooth. Add in Honey Peanut Butter and blend until fully combined. Garnish with chives and peanuts and serve warm.
