“Potatoes” - a tasty and simple treat

Everybody probably ate the “Potato” cakes at least once in their life. And such a dessert was especially popular in Soviet times. But now they love him no less. And it’s so simple to cook that such a delicacy can be made even by an aspiring and inexperienced hostess.

How did such a dessert come about?

There is no exact data on when and where the dessert called “Potato” appeared. But in other countries it is often called Runeberg pastries, and this is due to one legend. According to her, for the first time, the wife of the famous poet Juhan Ludwig Runeberg prepared the treat.

He lived very modestly, and when one day visitors came to the house, in the closet the wife found only a little alcohol and old cookies. And then the ingenious woman decided to grind the leftovers, mix them with jam, sour cream and liqueur and serve to the table. The result was a terrific dessert that everyone liked.

But there are other versions. So, it is believed that "Potato" appeared in the Soviet Union during times of total shortage.Adventurous housewives could cook a snack from practically any food leftovers, and in the course often went crumbs. And precisely from them began to prepare cakes.


So, how to cook the cake "Potato"? We offer some interesting recipes.

Recipe number 1

At home, you can cook a traditional "Potato" with a light filling, that is, the kind that our fathers and mothers bought in pastry shops a few decades ago.

For preparation it will be required:

For sponge cake:

  • six eggs;
  • about one glass of sugar
  • 150 grams of flour.

For cream:

  • 150 grams of condensed milk;
  • 100 grams of butter;
  • 50 ml of cream;
  • 80-90 grams of powdered sugar;
  • three to five tablespoons of brandy, rum or liqueur;
  • 100 grams of cocoa powder (for sprinkling).


  1. First you need to make a base, that is, a biscuit. To do this, you need to carefully beat the eggs with sugar, to end up with a fairly strong foam. Now you can add flour. But mix it with the egg mass gently so that the foam does not fall off.
  2. Transfer the mass to a greased form and send to the oven, preheated to 190-200 degrees, for about 15 or 20 minutes.
  3. Now break the biscuit into pieces and either chop with a blender, or skip through a meat grinder to make a crumb.
  4. Then you can proceed to the preparation of the cream. Butter and cream should be whipped with powdered sugar. Then add condensed milk and whisk everything thoroughly again.
  5. Now combine the cream with the crumb, add rum, liqueur or brandy and mix everything well with your hands to get a rather elastic mass.
  6. Form the first “Potato”, roll it in cocoa and place on the dish.
  7. Roll the finished balls again so that the cocoa icing becomes dense.
  8. Send all the cakes in the fridge for an hour, then remove and serve.

Recipe number 2

Together with the child, you can make a wonderful and very easy to prepare dessert of crackers. Here's what it takes:

  • 500 grams of vanilla crackers (you can and even need to use broken ones);
  • eight tablespoons of cocoa;
  • five tablespoons of liquid jam or fruit or berry syrup;
  • 100 grams of butter;
  • 100 grams of condensed milk;
  • one glass of milk;
  • half a glass of any roasted nuts;
  • five tablespoons of powdered sugar.

Cooking method:

  1. First you need to prepare the so-called liquid base. To do this, the oil should be taken out of the refrigerator and put in a warm place so that it becomes soft (you do not need to heat it).
  2. Mix softened butter with condensed milk. Next, add slightly warmed milk and cocoa (six spoons, the remaining two will be used for sprinkling), mix everything thoroughly.
  3. Now it is necessary to grind croutons. This can be done with a coffee grinder, meat grinder or blender.
  4. You also need to grind and nuts (can be simultaneously with bread crumbs).
  5. Mix nuts, crackers and powdered sugar. Then add the cream and jam or syrup.
  6. Now form the balls and roll them into cocoa.
  7. Done!

Recipe number 3

The most common is the dessert made from cookies and condensed milk.

List of ingredients:

  • 300-400 grams of any shortbread cookie;
  • 100 grams of butter;
  • about 2/3 cup of condensed milk;
  • five tablespoons of cocoa (plus two or three to roll);
  • sugar to taste (it is hardly required, since condensed milk and biscuits are very sweet).


  1. Cookies are broken into small pieces and chopped in any convenient way: by passing through a meat grinder, using a coffee grinder or immersing everything in a blender.
  2. Now, softened butter (to make it so, remove it in advance and leave it at the stove), mix with condensed milk and cocoa.
  3. Add the crumb and mix everything thoroughly with your hands, as if you were kneading dough.
  4. Form the cakes and roll each into cocoa.

Recipe number 4

If you have gingerbread at home, you can also quickly make a dessert of them.


  • 300 grams of gingerbread (only without filling);
  • 100 grams of nuts (you can use any, but best of all peanuts or walnuts);
  • one can of condensed milk;
  • six tablespoons of cocoa powder;
  • one glass of milk;
  • dark chocolate bar (for icing).


  1. Gingerbread should be crushed into small-fine crumb, for example, using a blender or meat grinder.
  2. Nuts (if you use peanuts, then it should be fried) must also be crushed. The most convenient way is to use a grinder or the same blender.
  3. Heat the milk and completely dissolve the cocoa in it.
  4. Now mix the nuts with gingerbread and add milk with cocoa.
  5. Add condensed milk to the mass and mix everything thoroughly with your hands so that you get a plastic dense mass.
  6. Then proceed to the preparation of the glaze. To do this, just melt the chocolate either in the microwave or in a water bath.
  7. Form balls from the composition and dip them into the glaze from all sides.
  8. Ready-made cakes send for an hour in the fridge and serve.
