How to cook ratatouille?

Ratatouille is a tasty dish for any family. But how to cook ratatouille? This dish aroused interest after the release of the same cartoon film. Its name is very unusual for us, although the ingredients are quite familiar. And, perhaps, you cooked it already, without implying what a valuable, nutritious and popular dish you have in a frying pan. In this recipe, completely simple and familiar products are used even for a child: onions, lettuce, eggplants, tomatoes, zucchini. Perhaps in your family this dish is called "lecho" and it is not surprising, because the name of the dish does not change its taste.

Cooking this dish will take you a little over two hours, but if you have assistants, then the time will noticeably decrease. Today we will cook ratatouille for eight people.

What is needed

Bulgarian pepper - three pieces, two cloves of domestic garlic (preferably not Chinese), two pieces of large eggplants, zucchini - one piece, a little more than a pound tomato, bay leaf, one onion,balsamic vinegar (two tablespoons), olive oil, it will need half a glass. Of particular importance are herbs. Prepare (all at once or one or two): cumin, basil, parsley, rosemary, mint. Naturally, salt and black pepper.

How to cook

Fry onion in olive oil (this is done in a deep frying pan, preferably thick-walled), when the onion is cooked in half, add the garlic, chopped finely. Fry until ready.

We clean the tomatoes from the seeds and peels, and cut them finely (leave three). Then add thyme herb and bay leaf. Simmer for at least ten minutes on low heat. Cut pepper into small cubes. Then add them to the sauce. Stew until soft and easy to break. Then put the pepper, herbs, parsley and remove from heat.

Cooking in the oven

We cut our eggplants in circles, we also arrive with zucchini and three tomatoes. After alternating the vegetables, put them on a baking sheet, where a little ready-made pepper sauce is pre-poured. As soon as the vegetables are laid out, pour the remaining sauce, close the baking sheet with foil and cook in the oven at one hundred and thirty degrees of heat.Ratatouille is in the oven for about two hours. After that, you can treat your family or invited guests with a Provencal dish.
