You will need
- - 100 ml of kefir;
- - 1 PC. egg;
- - 1/2 tsp salt;
- - 1 tsp dry yeast;
- - 1 tsp. Vanilla sugar;
- - 1 cup of wheat flour;
- - 150 g butter;
- - 1 cup of potato starch;
- - 100 g of icing sugar (for icing);

Pour the yeast in kefir, leave to rise in a warm place. Crush butter with flour and starch into oily crumb. Add yolk, salt, vanilla.
Combine the dissolved yeast with the flour mass. Knead the dough. Roll the dough into a bowl and place in the fridge for an hour.
Roll out the cooled dough into a layer 0.5 cm thick. Cut out circles with a glass, then make holes with a mold of a smaller diameter in half of the blanks.
Bake the blanks in the oven. Collect the cookies by gluing the circles together in pairs with a thick jam.
Cook the icing. Beat the remaining protein with powdered sugar, add a few drops of lemon juice. Glaze the cookies.
