Cheese Roll with Porcini Mushrooms
You will need
- For cheese and choux pastry:
- - 150 g of hard cheese;
- - 125 ml of milk;
- - 60 g of flour;
- - 50 g butter;
- - 4 eggs.
- For filling:
- - 200 g of mushrooms;
- - 100 g of cottage cheese;
- - 75 g of hard cheese;
- - 50 g smoked ham;
- - 2 feathers of green onions;
- - 1 tbsp. spoon of butter.
Prepare the dough: cut the cheese into thin strips. Divide the eggs into whites and yolks, whip the whites until they form a strong foam. Melt the butter in a skillet, pour the flour in there, stir until all the flour is mixed with the butter. Pour in the milk, add half of the chopped cheese and let it melt completely. Cool slightly and mix the yolks. Cool completely and mix in proteins. Dough for the roll is ready.
Cover the baking sheet with baking paper, spread a layer of cheese dough over it. Put in the oven, preheated to 180 degrees. Bake for about 10-15 minutes until golden brown.
Prepare the filling: cut the cheese into strips, cut the green onion with thin rings.Melt the butter in a skillet, fry the white mushrooms, then put it out under a lid. Add onion, diced smoked ham to the pan to the mushrooms, immediately remove from the stove. Slightly cool the mass, mix it with cheese or cream cheese.
Now collect the roll: turn the dough on a wet towel so that it turns out to be paper up, remove it. Evenly cover the dough with the filling, roll the roll.
